Filter Coffee Guide
A guide to making great filter coffee at Common Good using our Fellow Ode 2 grinder and Moccamaster brewer.
Quick Start
Follow these steps in order for a great batch of filter coffee.
1. Weigh the beans
- Use the digital scales on the counter
- Weigh ~60g of beans directly into the Fellow Ode hopper
- Coffee beans are stored in the Airscape canister (1L) near the grinder
2. Grind the beans
- Set the grind dial to around 7 on the Fellow Ode 2
- Start the grinder and let it run until complete
- Use the grinds knocker (give it a tap) to knock out any remaining grounds and keep the grinder clean
3. Prepare the Moccamaster
- Place a paper filter in the filter basket
- Add the ground coffee to the filter
- Important: Make sure the brew basket latch is open (so the coffee can flow through)
4. Add water
- Fill the Moccamaster reservoir to level 6-8 with fresh cold water
- Never use hot water in the reservoir
5. Brew
- Switch on the power button
- The brew takes about 4-6 minutes
- Fresh milk is in the fridge
Hot surfaces
The Moccamaster hot plate gets very hot during and after brewing. Keep objects away from the hot plate and handle the carafe carefully.
Using the Hot Plate
The Moccamaster has a hot plate that keeps brewed coffee warm at around 80-85°C.
- Auto shut-off: The hot plate automatically turns off after 100 minutes
- Manual control: You can turn off the machine at any time using the power switch
- Keep it clear: Don't place anything on or near the hot plate — it stays hot even after brewing
Existing coffee
If there's already coffee in the carafe:
- Within the last hour or two — It's fine to pour yourself a cup
- Unknown age or been there all day — Best to make a fresh batch. Old coffee tastes stale and isn't worth drinking
- Never reheat overnight coffee — If coffee has been left overnight, discard it and start fresh
When in doubt, make a fresh batch. It only takes a few minutes and tastes much better.
Dialling In Your Coffee
If your coffee doesn't taste quite right, adjust the grind setting on the Fellow Ode 2.

| Too bitter or sharp | Grind coarser: try 7.3 - 7.8 |
Start at 7
Grind setting 7 is a good starting point for most batch brew coffee. Make small adjustments (0.3-0.5 steps) until you find your sweet spot.
Coffee-to-Water Ratio
The standard ratio is 60g of coffee per litre of water. Here's a quick reference:

Use the digital scales for accurate measurement. The standard ratio of 60g per litre gives a well-balanced brew.
Tips for Better Coffee
Freshness matters
- Coffee tastes best within 2-4 weeks of roasting
- Keep beans sealed in the Airscape canister to preserve freshness
- Only grind what you need for each batch
Water quality
- Use fresh, cold water each time
- The Moccamaster heats water to the optimal brewing temperature (92-96°C)
Clean equipment
- Empty used grounds promptly
- Rinse the carafe and filter basket after each use
- The grinds knocker on the Fellow Ode helps keep the grinder clean between uses

Cleaning Up
Before leaving:
- Turn off the machine — Even though it auto-shuts off after 100 minutes, please turn it off when done
- Empty the filter basket — Discard used grounds in the bin and rinse the basket
- Empty and rinse the carafe — Don't leave old coffee in the carafe
- Wipe up any spills — Keep the area clean for others
Never leave overnight
Never leave the machine on or coffee sitting in the carafe overnight. Empty and clean up at the end of the day.
